Create an option to allow a translucent image overlay on product images to say "Out of Stock". I have a lot of customers who think that when an item is out of stock, it is a website issue. I think this option may help. Allowing it to be custom text would give greater flexibility, like for products seasonally out of stock, or to add a stocking date.
